Stephen’s first job in a bar was in 2000 during college at Mickey’s Irish Pub in Iowa City. He opened a Tapas restaurant with a friend in 2005. This is where he first experimented with craft cocktails and created a menu. They were forced to close due to the economy of 2008. Stephen decided to move to Chicago so he could grow in the Bar industry. He landed a job at Luxbar in the first few weeks. When he first started it was mainly vodka cocktails and they had about 40 whiskeys. When he left last year, they were up to about three hundred whiskeys and an elevated cocktail menu with only fresh ingredients. Just last August he was transferred to open Gibsons newest reservation, Gibsons Steak Italia. At Italia, he incorporated everything he learned between classes cocktails and high volume.
