Extra: Dark Rum
In a shaker, combine all ingredients with ice (excluding garnish). Shake well. Fine strain into a rocks glass with fresh ice. Garnish with a mint sprig (optional).
Combine 1 cup water and 1 cup demerara sugar in a saucepan and bring to a boil. Reduce to a simmer and stir until sugar dissolves. Let it cool, then pour into a container and store in the fridge for up to a month.
